Ingredients

  • 600 g pork shoulder
  • 2 tbsp achiote paste
  • 1 tsp ground sweet paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 60 ml lime juice
  • 2 tbsp vegetable oil
  • 150 g fresh pineapple
  • 1 pcs white onion
  • 2 pcs garlic
  • 8 pcs mexican tortilla
  • 30 g fresh cilantro
  • 2 pcs lime

Instructions

    Slice the pork into thin pieces. In a bowl, mix achiote paste, paprika, cumin, oregano, salt, pepper, lime juice, and oil.

    Marinate the meat in the prepared mixture for at least 20 minutes.

    Dice the pineapple into small cubes. Finely chop the onion and garlic.

    Heat a skillet over medium heat. Cook the marinated pork for 8-10 minutes until browned.

    Add the onion and garlic, cook for 2 minutes. Finally, add the pineapple and cook for another 3-4 minutes.

    Warm the tortillas in a dry skillet for 30 seconds on each side.

    Place the meat on the tortillas, sprinkle with cilantro, add diced onion and lime wedges for serving.
