Simple Shoyu Tare for Classic Ramen
vxdaA simplified shoyu tare that creates perfect balance for ramen soups. This foundational sauce plays a supporting role, allowing the soup to shine while adding essential umami depth. Makes enough for 15 servings.

Ingredients
- 250 ml dark soy sauce
- 150 ml light soy sauce
- 30 ml saishikomi shoyu
- 40 ml mirin
- 40 ml cooking sake
- ¼ tsp msg
Instructions

Measure out all ingredients into a pot.

Heat the mixture to 83°C (181°F), stirring occasionally.

Once the temperature is reached, maintain for 1 minute.

Remove from heat and let cool to room temperature.

Cover with newspaper or breathable cloth and let rest overnight.

Transfer to a container and store in refrigerator until ready to use.

Use 30ml of tare per 300ml of ramen soup.
