Ingredients

  • 100 g brown rice
  • 200 g chorizo sausage
  • 1 pcs avocado
  • 100 g corn
  • 100 g red bean
  • iceberg lettuce
  • red cabbage
  • pickled jalapeño pepper
  • red onion
  • 4 tbsp yogurt
  • 1 tbsp mayonnaise
  • 25 g grated cheddar cheese
  • chives
  • lime
  • extra virgin olive oil

Instructions

    Prepare brown rice according to the instructions on the package (cook in salted water for about 30 minutes).

    Cut the chorizo sausage into cubes or slices, then fry in a pan until the fat melts and the sausage turns golden brown.

    Peel the avocado and cut into thin slices.

    Drain the corn and beans, then quickly rinse under cold water.

    Wash the iceberg lettuce and red cabbage, then shred finely. Lightly sprinkle the cabbage with salt to soften it.

    Slice the red onion into thin feathers.

    Combine yogurt with mayonnaise, then season with salt and pepper to taste.
