Cauliflower Soup with Potatoes and Carrots
vxdaCauliflower soup is one of the most beloved soups in Poland. It contains potatoes and carrots, is enriched with cream and served with bread.
Ingredients
- 2 tbsp oil
- 1 tbsp butter
- 1 onion
- 2 carrot
- 5 potato
- 500 g cauliflower
- 1 ½ litra chicken broth
- 2 tbsp fresh dill
- 2 tbsp chopped chive
- 200 g heavy cream

In butter and oil, sauté the diced onion, add peeled and sliced carrots and cook for 2 minutes, stirring occasionally.

Add peeled and diced potatoes and sauté for about 5-7 minutes, stirring from time to time. Season with salt and pepper.

Add fresh cauliflower, divided into small florets, and sauté everything together briefly (add frozen cauliflower later). Pour in hot broth and bring to a boil. Cook covered for about 20 minutes until vegetables are tender. Halfway through this time, add frozen cauliflower florets, previously rinsed under hot water in a strainer.

Remove soup from heat, add chopped dill and chives. Mix cream with a few tablespoons of cold water, then with a few tablespoons of broth. After tempering, gradually add cream to the soup while constantly stirring. Serve with bread.
