Polish Bean Soup
vxdaPolish bean soup is a warming and nutritious dish, perfect for cold days, prepared with ribs and fried bacon.
Ingredients
- 250 g butter bean
- 500 g pork rib
- 250 g smoked bacon
- ½ pęczka soup greens
- 3 pcs allspice
- 1 g bay leaf
- 1 g large onion
- 1 g garlic clove
- 4 pcs potato
- 1 tbsp marjoram

The day before cooking the soup, soak the beans: place them in a pot, cover with about 1 liter of cold water and leave overnight to swell.

The next day, drain the beans. In a large pot, place the ribs cut into 2-3 pieces, add 2.5 liters of water, add the beans and 1 teaspoon of salt. Bring to a boil, remove the foam that forms, reduce heat and cook covered for about 1 hour and 15 minutes.

Add 1 peeled carrot (peel the second one, grate it on a coarse grater and set aside for later), peeled parsley root, a piece of celery root, as well as allspice and bay leaf. Cook for 15 minutes.

Separate the skin from the bacon, remove hard cartilage, dice finely. Place in a pan and, stirring occasionally, fry until golden. Add the diced onion and fry, stirring, for about 5 minutes. At the end, add garlic pressed through a garlic press. Transfer to the soup pot, using some of the broth to rinse the pan.

Add the reserved grated carrot to the soup, season with freshly ground pepper and salt if needed. Cook for 10 minutes.

Peel the potatoes, dice them and add to the soup. Cook for 30 minutes. At the end, add marjoram and cook briefly. Serve with bread.
