Ingredients

  • 1 kg potato
  • 1 pcs onion
  • 1 pcs garlic
  • 4 pcs eggs
  • 2 tbsp wheat flour
  • 1 pinch salt
  • 1 pinch pepper
  • 50 g lard
  • 200 ml heavy cream
  • 2 tbsp chives

Instructions

    Peel the potatoes and grate them – part on small holes of the grater, and the rest on large holes.

    Peel the onion, then grate it on fine holes of the grater.

    Peel the garlic clove and grate it on a fine grater.

    Place all grated ingredients in a sieve and leave for fifteen to twenty minutes to drain excess water. Don't pour out the starch that settles at the bottom!

    After draining, transfer the grated potatoes and onion to a large bowl. Carefully pour out the water from the potatoes, leaving the white starch at the bottom of the container.

    To the bowl with potatoes, crack 4 eggs, add 2 full tablespoons of flour, the recovered starch, salt and pepper to taste. Thoroughly combine the ingredients until a smooth batter forms.

    Heat lard in a pan over medium heat. Spoon portions of the batter, forming pancakes. Fry on both sides until they achieve a golden color and become crispy.

    Place fried pancakes on paper towels to remove excess fat.

    Serve the pancakes hot, with a dollop of sour cream and sprinkled with chopped chives.
