Aromatic Beer Marinade with Rosemary and Garlic

The beer perfectly softens the meat's structure, while fresh rosemary and pungent garlic give it an unforgettable, deep flavor. It's the perfect combination for preparing pork neck for grilling that will delight everyone.
Ingredients
- 1 kg pork neck — slices approx. 2 cm (¾ inch)
- 250 ml pale beer — pilsner or lager
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tsp mustard — preferably Dijon or grainy mustard
- 4 pcs garlic — minced
- 2 pcs rosemary — sprigs (or 1 teaspoon dried)
- 1 tsp fresh ground black pepper
- 1 pcs onion — sliced
- 1 pinch sea salt — to taste (add just before grilling)

In a bowl, mix together the beer, olive oil, apple cider vinegar, mustard, garlic, rosemary, and pepper.

Lightly tenderize the pork neck slices with a meat mallet and score the edges to prevent them from curling up during grilling.

Place the meat in a glass dish or a ziplock bag, pour over the marinade, and add the sliced onion.

Refrigerate for a minimum of 12 hours (preferably overnight or up to 24 hours).

Remove the meat 30-40 minutes before grilling to allow it to come to room temperature. Salt only now.

Grill over medium heat for 4-6 minutes per side, until the internal temperature reaches 70-72 °C (158-162 °F).

Rest the meat for 5 minutes before serving, to allow the juices to redistribute evenly.
Notes
For a deeper flavor and exceptional crust: If you want to enhance the flavor and get a beautiful, shiny crust on the pork neck, you can add 1 tablespoon of honey to the marinade. The honey will caramelize during grilling, giving the meat an appetizing look and a sweet note.
