Cauliflower Soup with Potatoes and Carrots

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 onion
  • 2 carrot
  • 5 potato
  • 500 g cauliflower
  • 1 ½ litra chicken broth
  • 2 tbsp dill
  • 2 tbsp chopped chive
  • 200 g sour cream

Instructions

    In butter and olive oil, sauté diced onion, add peeled and sliced carrots, and cook for 2 minutes, stirring occasionally.

    Add peeled and diced potatoes and sauté them for about 5-7 minutes, stirring occasionally. Season with salt and pepper.

    Add fresh cauliflower, divided into small florets, and sauté everything together for a moment (add frozen cauliflower later). Pour in hot broth and bring to a boil. Cook covered for about 20 minutes, until the vegetables are tender. Halfway through this time, add the frozen cauliflower florets, previously rinsed on a sieve under hot water.

    Remove the soup from the heat, add chopped dill and chives. Mix the cream with a few tablespoons of cold water, then with a few tablespoons of broth. Once tempered, gradually add the cream to the soup, stirring constantly. Serve with bread.
