Ingredients

  • 1 pcs ham
  • 1 pinch clove

For the glaze

  • 120 g brown sugar
  • 100 ml maple syrup
  • 100 ml honey
  • 35 g Dijon Mustard

For Baking

  • 180 ml water

    Take off the ham's outer skin with care, keeping as much of the fat underneath as you can. Get rid of the skin.

    Score the fat on top of the ham in a diamond or crisscross pattern using a sharp knife. Make the cuts about 1 cm apart, going deep enough to reach the fat layer, but don't cut it off.

    Put whole cloves in the middle of each diamond where you've scored the fat. This step is optional, but it makes the ham taste better and helps keep the fat in place.

    Set your oven to warm up to 150°C (300°F).

    Mix the glaze: Mix brown sugar, maple syrup, honey, and Dijon mustard in a bowl. Stir until it's all smooth and mixed well.

    Put the ham with the cloves into a big pan for roasting, with the fat facing up. Use a brush to gently spread about a quarter of the glaze over the ham, being careful not to knock the cloves out of place.

    Add 180 ml (¾ cup) of water to the bottom of the pan around the ham. This makes steam to help keep the glaze from burning.

    Put foil tightly over the roasting pan and put it on the lowest rack in the oven. Let it bake for 40 minutes.

    When the 40 minutes are up, carefully take the ham out of the oven and take off the foil. Put another thick layer of glaze on top of the ham.

    Put the ham back in the oven without the foil and bake it for 25 minutes.

    Take the ham out again, spread the rest of the glaze on it, and bake for another 25 minutes without the foil, making the total uncovered baking time 50 minutes.

    Once the ham has baked for 90 minutes in total (40 minutes covered and 50 minutes uncovered), take it out of the oven.

    Give the ham a 15-minute rest. During this time, use a fork to carefully remove the cloves since they can be too strong to eat.

    Cut the ham across the bone into thin slices. Pour the juices from the pan over the slices before you serve it.
