Crispy Potato Pancakes with Sour Cream and Chives

- 1 kg potato
- 1 pcs onion
- 1 pcs garlic
- 4 pcs egg
- 2 tbsp wheat flour
- 1 pinch salt
- 1 pinch pepper
- 50 g lard
- 200 ml sour cream
- 2 tbsp chive

Grate the peeled potatoes – some on the small holes of the grater, and the rest on the large holes.

Peel the onion and then grate it on a fine grater.

Peel a clove of garlic and grate it on a fine grater.

Place all the grated ingredients on a sieve and leave for fifteen to twenty minutes to get rid of excess water. Do not pour out the starch settled at the bottom!

After draining, transfer the grated potatoes and onion to a large bowl. Carefully pour the water from the potatoes, leaving the white starch at the bottom of the bowl.

To the bowl with potatoes, add 4 eggs, 2 full tablespoons of flour, the recovered starch, salt, and pepper to taste. Carefully combine the ingredients until a smooth mass is formed.

Heat lard in a frying pan over medium heat. Place portions of the batter, forming pancakes. Fry on both sides until golden brown and crispy.

Place the fried pancakes on a paper towel to remove excess fat.
