Ingredients

Meat and Sauce

  • 400 g chicken breast
  • 1 pcs onion
  • 1 ząbek garlic
  • 400 g canned diced tomato
  • 1 tbsp tomato paste
  • 200 ml sour cream
  • 1 tsp sugar
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano

Pasta and Finish

  • 400 g fusilli pasta
  • 1 tbsp salt for water
  • 50 g parmesan cheese
  • 2 tbsp parsley

Instructions

Preparation

    Rinse the chicken breast, pat dry with paper towel, and cut into 2-centimeter cubes.

    Peel the onion and finely dice it, then press the garlic through a press or chop very finely.

    Set a large pot of water with a tablespoon of salt on the stove for the pasta.

Frying the Chicken

    Heat olive oil in a large, deep skillet over medium-high heat.

    Add the chicken pieces and fry for 5 to 6 minutes, stirring, until the meat is white on all sides and lightly browned.

    Add the onion and fry together with the chicken for 3 minutes, until translucent.

    Add the garlic and fry for another 30 seconds, stirring to prevent burning.

Sauce and Pasta

    At the same time, add the pasta to the boiling, salted water and cook according to package directions, until al dente.

    Add the tomato paste to the chicken and onion mixture, stir, and fry for one minute until slightly darkened.

    Pour in the canned tomatoes, add sugar, basil, and oregano, mix, and simmer over low heat for 8 minutes.

    Pour in the cream, gently mix, and heat for another 2 to 3 minutes over low heat to prevent curdling.

    Taste and season with salt and a pinch of pepper.

Combining and Serving

    Drain the cooked pasta, reserving half a cup of the cooking water.

    Transfer the pasta to the skillet with the sauce and mix; if the sauce is too thick, add some of the pasta water.

    Serve onto plates, sprinkle with grated cheese and chopped parsley, and serve immediately.

Notes

If your child doesn't like visible pieces of onion, grate it instead of dicing — it will dissolve in the sauce.

  • For a lactose-free version, replace the cream with coconut cream or a plant-based 18% alternative.
  • The sauce is great for freezing — make a larger batch of just the sauce with chicken and reheat with freshly cooked pasta.
