Garlic Butter - Caramelized Roasted Garlic and Herb-Infused Butter

Ingredients
For the Roasted Garlic
- 2 pcs garlic head — preferably large, firm
- 2 tbsp olive oil
- 1 pinch sea salt
- 1 pinch pepper — freshly ground
For the Garlic Butter
- 200 g butter — softened
- 2 pcs garlic — at room temperature
- 2 tbsp parsley — from 2 heads
- 1 tbsp chive — finely chopped
- 1 tsp thyme — fresh
- ½ tsp salt — fresh
- 1 pinch pepper — to taste

Preheat the oven to 200 °C (top-bottom heat, no convection).

Remove the loose, papery outer layers from 2 heads of garlic, but leave the heads intact.

Using a sharp knife, cut off about 0.5 cm from the top of each head to expose the cloves.

Place the heads cut-side up on a piece of aluminum foil. Drizzle generously with olive oil (so that it soaks into the cloves), sprinkle with salt and pepper.

Loosely wrap in foil, creating sealed packets, and place in a heatproof dish or on a baking sheet.

Roast for 40-50 minutes, until the cloves are soft, golden, and caramelized — check with a fork from the center. If you want a darker color, open the foil for the last 5-10 minutes.

Remove from the oven and let cool for about 10 minutes, until the garlic is cool enough to handle. Squeeze the cloves out of their skins — they should pop out like a paste.

Mash the roasted, squeezed garlic with a fork until smooth.

In a bowl, combine the softened butter with the garlic paste — preferably with a fork or spatula, until the mixture is uniform.

Taste — season with salt or a few drops of lemon juice if you want a touch of freshness.

Transfer the butter to a piece of plastic wrap or parchment paper, shape into a log (like a roulade), and twist the ends like a candy wrapper.

Notes
Tip: If you are preparing only 1 head of garlic or prefer to avoid aluminum foil, you can bake the garlic in a small, oven-safe dish with a lid. The result will be just as perfect.
Bonus - Quick Garlic Bread: Cut a baguette or other favorite bread lengthwise. Spread generously with the prepared garlic butter, then wrap in foil. Bake for 10 minutes at 180 °C, then unwrap the foil and bake for another 2-3 minutes to brown the bread.
