Light Leczo with Poultry Sausage and Zucchini
vxdaA lighter version of the classic Polish leczo — poultry sausage and lots of vegetables instead of fatty bacon. Filling, colorful, and perfect for an evening dinner without the heaviness.
Ingredients
Base and Vegetables
- 200 g poultry sausage
- 1 pcs red pepper
- 1 pcs yellow bell pepper
- 1 pcs zucchini
- 1 pcs onion
- 2 ząbki garlic
- 3 pcs tomato
- 1 tbsp tomato paste
Spices and Additions
- 1 tbsp rapeseed oil
- 1 tsp sweet paprika powder
- 1 pinch ground chili pepper
- 1 pcs bay leaf
- 2 pcs allspice
- 1 tsp dried marjoram
- 1 tbsp parsley

Cut the poultry sausage into slices about half a centimeter thick.

Peel the onion and chop it into small dice, and press the garlic through a garlic press or finely chop it.

Wash the bell peppers, remove the seeds and cores, and cut into thick strips or chunks.

Wash the zucchini and cut into half-slices about half a centimeter thick.

Blanch the fresh tomatoes with boiling water, peel them, and dice them, or prepare a can of diced tomatoes.

Heat the oil in a deep pan or a wide pot with a thick bottom.

Add the onion and fry for 2 to 3 minutes, until translucent.

Add the sliced poultry sausage and fry together for another 3 minutes, until lightly browned.

Add the garlic and fry for another 30 seconds or so, stirring so it doesn't burn.

Add the bell peppers and zucchini, mix, and fry for 3 to 4 minutes, until the vegetables are slightly softened.

Sprinkle in the sweet and hot paprika, pour in the tomato paste, and mix thoroughly.

Add the tomatoes, bay leaf, allspice berries, and marjoram, mix everything together.

Cover the pan and braise the leczo over low heat for about 20 minutes, until the vegetables are tender and the sauce has slightly thickened.

Taste and season with salt and pepper to taste.

Remove the bay leaf and allspice berries.

Sprinkle with fresh chopped parsley and serve immediately.
Notes
For a light dinner, it is best served with a slice of wholemeal bread or without any additions — leczo itself is filling.
- For an even lighter version, you can omit the sausage and add a handful of canned chickpeas for protein.
- It also tastes very good the next day, so it's worth making a larger portion.
