Ingredients

  • 300 g dark rye flour
  • 200 g malted rye flour
  • 1 ½ l water
  • 2 tbsp molasses
  • 1 tsp salt
  • 1 pcs bitter orange zest
  • raisin
  • sugar

For serving

  • cream
  • milk
  • sugar

Instructions

    In the first step, boil 1 liter of water. In a large bowl or pot, begin gradually adding the dark rye flour and malted rye flour, mixing vigorously to prevent lumps from forming. Add the flour in batches, ensuring the mixture is smooth.

    Once the mixture is uniform, pour in the remaining 0.5 liters of water, mixing thoroughly.

    Cover the mixture and leave it in a warm place for about 1 hour to allow the flavors to develop.

    Then, cook the mixture over low heat, stirring constantly, until it thickens noticeably. This process should take approximately 30 minutes.

    Add salt, molasses, grated orange zest, and raisins (if using) to the prepared base. Mix everything thoroughly.

    Pour the mixture into a baking dish suitable for oven use.

    Bake in a preheated oven at 120°C (250°F) for approximately 3 hours.

    After baking, cool the mämmi, then place it in the refrigerator. Allow it to rest for 3-4 days before serving, so that the flavors can meld and develop perfectly.
