Ingredients

  • 250 g Greek yogurt — (Greek-style, minimum 9% fat)
  • 2 pcs cucumber — large (preferably greenhouse or salad variety)
  • 2 pcs clove garlic
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon juice — or white wine vinegar
  • 1 tbsp dill — (optional mint)
  • 1 pinch sea salt — to taste
  • 1 pinch pepper — to taste

    Prepare the cucumber. Peel it (if the skin is thick) and grate it on a coarse grater or finely chop with a knife. Sprinkle with a pinch of salt and set aside for 5-10 minutes.

    Squeeze out the water. Transfer the cucumber to a sieve or cheesecloth and squeeze out excess liquid firmly. This is a crucial step - otherwise the sauce will be watery.

    Prepare the garlic. Peel the cloves and press them through a garlic press or chop very finely.

    Mix the base. In a bowl, combine the Greek yogurt, garlic, olive oil and lemon juice (or vinegar). Mix thoroughly.

    Add cucumber and herbs. Stir in the squeezed cucumber and chopped dill. Season with salt and pepper.

    Chill. Refrigerate the sauce for at least 30 minutes to allow the flavors to meld.

Notes

Useful Tips:
  • Yogurt Selection: Real, thick Greek yogurt works best for tzatziki. If you only have thinner plain yogurt on hand, you can strain it through cheesecloth suspended over a bowl for several hours to achieve the desired consistency.
  • Garlic Intensity: Remember that garlic has a strong aroma. For about 200 g of yogurt, 1 larger clove is usually enough if you prefer a milder flavor. You can always add more later.

Serving: This versatile sauce is the perfect accompaniment to grilled meat, such as gyros or souvlaki. It also tastes great with baked potatoes, fresh pita bread, as a dip for raw vegetables or your favorite chips.

Storage: Store tzatziki sauce in a tightly closed container in the refrigerator. It will stay fresh and delicious for 2-3 days.
